Für das Rote Bete Carpaccio mit Blauschimmelkäse zunächst Essig, Zucker und Zitronensaft in einer Schüssel verquirlen. Öl in dünnem Strahl darunter schlagen. Mit Salz und Pfeffer abschmecken.

Rote Bete putzen, schälen und in dünne Scheiben hobeln.

Thymian waschen, trocken schütteln und halbieren.

Je ca. 60 g Saint Agur Blauschimmelkäse auf das Carpaccio bröseln.
