Die Briochescheiben mit einer Teigrolle etwas flach rollen.

Für die Füllung des Brioche-Desserts die Erbeeren waschen, putzen und in sehr kleine Würfel schneiden. Mit Aceto Balsamico und Bourbon-Vanillezucker mischen.

Géramont classic in Scheiben schneiden und auf den Briochescheiben verteilen. Erdbeeren darüber geben und zu Röllchen aufrollen. Eier mit Milch verquirlen. Die Röllchen darin wenden.

In einer Pfanne reichlich Butterschmalz erhitzen und die Röllchen darin rundum braten. Noch warm in Zimt-Zucker wenden. Das Brioche-Dessert lauwarm oder auch kalt servieren.
