Champignons putzen, evtl. abbürsten und in Achtel schneiden. Käse in Streifen schneiden. Chilischote aufschneiden, Kerne entfernen und die Schote sehr klein schneiden. Frühlingszwiebel putzen, waschen, in Ringe schneiden. Kresse vom Beet abschneiden. Alle Zutaten dekorativ auf Tellern anrichten.

Sahne und Essig verrühren und mit Salz und Pfeffer abschmecken. Über den Champignon Salat geben und mit den Mandeln bestreuen.
